I’ve been getting pretty good at making deviled eggs lately. We have to make them at work. The nice part about making deviled eggs at work is that the eggs come already hard boiled. No boiling necessary. Me likey. Saves a step. You could also do that as well. It took me a long time to figure out how to get hard boiled eggs right. What I do is bring the eggs to hard boil, take them off the heat and let them simmer in a covered pan for 20 minutes. After that, all you have to worry about is piping the mixture on to the eggs and making them look purty. We like to top them with dill, bacon bits, or paprika.

My deviled eggs have bacon, cheddar, and scallions and they make a good low carb snack when dieting. Deviled eggs are fun to work with because they’re like a blank canvas and you can add whatever you like to them.

  • 4 hard boiled eggs, cut in half length wise
  • ¼ cup of low fat mayonnaise
  • 1 tablespoon of chopped bacon or bacon bits
  • 1 tablespoon of cheddar low of low fat cheddar cheese
  • 1 tablespoon of chopped scallions
  • 3 dashes of Worcestershire sauce
  • ¼ tsp of garlic salt

  1. In a medium sauce pan, place the uncooked eggs in some water. Enough water to cover the eggs and let the eggs come to a boil. Do not leave the kitchen. Once the eggs have come to a hard boil, remove them from the heat, cover the eggs still in the pan and let them rest for 20 minutes. They will continue to cook still off the heat.
  2. After the 20 minutes is up, remove the eggs and place them in some ice cold water.
  3. Peel the eggs and slice the eggs in half. Sccop out the yolk and place the yolks into a bowl.
  4. In a bowl, combine the yellow cooked egg yolks, mayo, cheddar, worcestershire sauce, and garlic salt. Stir until well combined.
  5. Pipe the egg mixture onto the deviled and serve cold.
