- 2/3 cup balsamic vinegar
- 1/3 cup olive oil
- 2 Tbs. soy sauce
- 4 1/2 tsp. firmly packed golden brown sugar
- 3/4 tsp. freshly ground pepper
- 1/2 cup finely chopped fresh rosemary
- 5 garlic cloves, chopped
Ill just start off by saying that life has been busy for the last week but I think Ive got a good stretch of calm now to work on some fall cooking. I spent the weekend in NYC, which is one of my favorite places. Ive been there enough to know my way around the city and have favorites. I ate well, the weather was perfect and Ill have some photos for you later this week. In the mean time, heres a recipe for a marinade that is sure to jazz up your chicken this week.
Combine the balsamic vinegar, olive oil, soy sauce, brown sugar and pepper in a food processor. With the blade running, add in the rosemary and garlic and process until smooth. If you want to spice it up a little you can add in red pepper flakes. I used the marinade with chicken breasts overnight to add a great flavor and the tang of the balsamic. This makes a good amount of marinade so if you need less for 1-2 chicken breasts you can cut the recipe in half.
